Savoury Mince Recipe
(Save-Me Mince)
You open the fridge, you're getting towards the end of your food supply since your last grocery shop, you have some mince and heap of veggies you have no idea what to do with but you don't want to eat poorly.
I GIVE YOU... the SAVE ME MINCE. Its saving you from worrying about what to eat, its easy, convenient, kid-friendly and delicious!
Ingredients:
500g mince
1 x onion
1 x tbsp garlic
1/2 broccoli
1/3 capsicum
3 carrots
2 x zucchini
1/2 x cup peas
small tin of corn
1/2 cauliflower
2 x medium sweet potatoes
1 can lentils or beans (optional)
1 x cup BBQ sauce
1/2 x cup Worchestershire sauce
1 & 1/2 tbsp tomato paste
2 cups of beef stock
Method:
Preheat oven to 180 degrees, stab the sweet potato with a fork 2-3 times, place the sweet potatoes whole (or cut if they are larger/thicker) on the tray, drizzle with oil and cover with salt.
Dice and cut all the veggies into smaller sizes (the smaller the better if you are serving this for kids as well)
In a large fry pan or wok, fry up onion, capsicum and garlic until translucent or fragrant or softened to your liking.
Add the diced veggies (and lentils/beans) with 1 cup of the beef stock and mix together
Once heated and veggies start to soften, add the beef mince and break up the mince as you stir.
Add the remaining sauces and stock and combine well.
Simmer uncovered until the sauce thickens to your liking and veggies are cooked through.
When the sweet potato has cooked through, split the potato in half and spread the mince across the sweet potato and ENJOY!
